Cherry Mascarpone Waffles... YUM!

Recipe below :-)

  • 2 cups flour
  • 1 cup mascarpone, at room temperature
  • 1 cup almond milk, at room temperature (or any milk of your choice)
  • 1 cup halved fresh sweet cherries
  • 2 tablespoons coconut oil
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • pinch salt
  • 2 eggs, at room temperature
Directions:
Whisk together the flour, sugar, baking powder, and salt in a medium bowl. In a small bowl, whisk together the egg, oil, mascarpone and milk. Add wet ingredients to the dry and stir to combine. Fold in the cherries. Follow the instructions included with your waffle iron to complete the waffles.
